Boiled Carrots + Bonus Salad Recipe

Description

This is how long to boil carrots, how to season them, how to store them. Try this recipe of a quinoa salad with boiled carrots. 


Ingredients

Scale
  • 5 carrots
  • salt
  • hot water

Instructions

  1. Fill the pan with water and a little salt, and bring to a boil.
  2. Put the steamer basket on it.
  3. Wash carrots and cut them evenly.
  4. Once water comes to a boil, add the chopped carrots on the basket steamer and cover the pan with a glass lid.
  5. Check with a fork. Turn off the heat when carrots are al dente.
  6. Pull the steamer basket off the pan and run the carrots under cold water.
  7. Once carrots are cold, bring the steamer basket on the steaming pan again and cover with a lid. DO NOT TURN ON THE HEAT!
  8. Leave the carrots 3-4 minutes until they are soft and warm again.
  9. Bring them to a glass jar and start composing your favorite salad.

Notes

BONUS BOILED CARROTS RECIPE:

 

1- Cut feta cheese into bite chunks and season with 1tbsp olive oil, 1/2 tbsp lemon juice, and dried oregano.

2- Add carrots, 1 cup of cooked quinoa. Mix gently with your hands.

3- Add the dressing: 2tbsp yogurt, 2tbsp olive oil, 1tbsp white wine vinegar, one anchovy, caperi, 1/2tbsp walnut pesto. Blend until you have a creamy consistency.

4- Decorate with your favorite herbs. 

Enjoy for dinner or as a takeaway lunch.
