Scale
For the dip:
- 3 1/2 cups feta cheese
- 1 tbsp whole milk
For the jam:
- 2 cups strawberry
- 1/4 tbsp fennel seeds
- 1 tbsp lemon juice
- Zest of 1/2 lemon
- 1 tbsp honey
Instructions
- Put feta cheese and milk in the food processor/blender and mix until smooth. If you don’t mind the grainy cheese then don’t worry about making everything creamy.
- Mix the ingredients for the jam. Let rest for 5 minutes and then bring to a simmer under medium heat for 10 minutes.
- Let the jam cool down until it gets to room temperature.
- Transfer the dip into a shallow plate and top it over with the jam.
- Decorate with basil or thyme.
Notes
- In case you are using this whipped feta recipe for large gatherings make sure you keep it in the refrigerator for a couple of hours, so the dip won’t go runny and keeps its consistency as thick as possible. Making it a day in advance works just fine too.
- You will want to keep the jam separate as well. Use a glass jar or another glass container. Keeping them separate will prevent the feta and strawberry combination from taking one another’s colors.
- It is safe to store the leftovers in an airtight container and use them for 2-3 more days.
