1. Put two-three tablespoons of cocoa butter into 500 ml boiling water. Mix until dissolved and let it cool. 

2. Separate the egg whites from the yolk into two different bowls.

  • 2 tbsp unsweetened cocoa powder (plus for dusting)
  • 500ml hot water
  • 2 1/2 cups mascarpone cheese
  • Two whole eggs

Instructions

  1. Add cocoa powder to the hot water. Mix to dissolve and let rest.
  2. Separate the yolks from the whites.
  3. Beat the yolks starting at low speed, and then increase until they get a little creamy and pale color.
  4. Add the mascarpone cheese and keep mixing at a low speed until they get a thick cream.
  5. Beat the whites until you have a meringue. Add sugar for sweetening. Mix until sugar is dissolved.
  6. Add the meringue to the yolks+mascarpone bowl partly. At this point, use a spatula. (Do not use a hand mixer anymore)
  7. Keep doing this until the mixture is not thick or runny.
  8. Briefly dip the ladyfingers in the cold cocoa and start layering. 
  9. By rule, 1 layer of ladyfingers and 1 layer of cream. 
  10. Chill in the fridge for 2-3 hours. Dust with cocoa powder before serving.
  11. Decorate with fresh mint leaves.

Notes

Layer your tiramisu glass as you feel it will be the most impressive. You may not layer at all. You may add only 1 ladyfinger (priorly dipped in cocoa) and cream.
