It’s crucial for the romaine to be fresh, clean, and very crispy. According to the original recipes, you need to chop thinly (not finely) in order to absorb the dressing better.
  • Feta Cheese – Whether cut in bite-size cubes or crumbled feta cheese is a must-ingredient for this salad, so don’t skip it.

Description

Marouli Salad is a crisp and vibrant Greek lettuce salad that comes with a tangy dressing. Cut thinly the lettuce; finely chop parsley, dill, and scallions and toss them in a red vinegar dressing.


Ingredients

  • 3 romaine lettuce heart
  • 3 scallions
  • feta cheese
  • dried oregano
  • olive oil
  • sourdough, 1 slice

 

Greek Dill Dressing:

  • 1/2 cup chopped dill
  • 1/2 cup chopped parsley
  • 1/2 cup olive oil
  • pinch of salt
  • 4 tbsp red wine vinegar (or lemon juice)

Instructions

  1. Cut the feta cheese into cubes and marinate with olive oil, lemon juice, and dried oregano. Set aside.
  2. Finely chop the herbs and toss them into the red wine vinegar and olive oil dressing. Shake the jar for a proper combination.
  3. Cut thinly the romaine lettuce and the scallions.
  4. In a large bowl place the scallions, a bit from the dressing, and mix.
  5. Then add the lettuce and toss very gently to coat.
  6. Transfer to the plates. Add cheese, and dressing as desired.

Notes

Wash and dry the lettuce and keep it in an airtight container for up to three days.

Prepare the dressing and use it safely for a week.
